PANCAKE!!
Ok, world! Get a load of this!
This is my grandma’s recipe for in-the-oven pancake. This is the common pancake (=pannukakku) in Finland. There are literally hundreds of different versions of these, some which are salty and others (like this one) that are more suited for desserts… I might even translate some of those recipes too.
Anyway, here it is:
4 eggs
2 dl water (2 dl is roughly a cup)
2 dl milk
2 dl wheat-flour
a pinch of salt and sugar
Mix ingredients, let sit for 5-10 minutes. Make sure you beat the whole thing into a thick goo.
Sure sounds delish, don’t it..?
Place in a glazed earthenware form (or a glass one, if you prefer) that will tolerate being put in the oven. Also, please make sure it has a non-stick surface… Or, grease the sides with either margarine (butter substitute) or butter itself to ensure that the Pancake(tm) will come loose once baked.
Place in a preheated oven at 225 degrees celsius (437 degrees F) and let be for approx 30 min.
Check every once in a while with a fork to see if it’s done. (Done = nothing sticks to the fork when you poke the pancake.)
NOTE: make sure the sides of the form are high (2 inches or more). It will rise about double in the oven, but alas will flatten to a mere inch or so in thickness when taken out of the oven (depending on the size of your form).
Cut piece, and serve with strawberry jam…

Making a protein-fortified pancake (own recipe):
Otherwise do as above, but cut one half dl (quarter cup) of flour away and add instead 1 dl (half a cup) of protein powder. Can be any flavor…chocolate pancake, strawberry pancake, raspberry pancake… Have fun. Same poke-the-fork-rule applies.
However, when using the protein powder, I found it becomes a bit more “hard” and definitely more filling.

Yes please! Perhaps we should wrap up some pancakes for Friday’s energy drink tasting… to clear the palate and give the caffeine, inositol, taurine et friends some carb company for the post-drink workout.

All this talk about pancake - and the fact that we “only” had homemade burgers for yesterday’s tasting - made me want some for lunch. Let me tell you right off the pan that you have completely revolutionized the way I make pancake. Of course, being a Finn, I too have grown up with oven pancake, but we’ve always poured the batter directly on a greased oven baking plate. This makes for nice thin pancakes, but is H E L L to clean up afterwards as some of the pancake inevitably gets stuck. If the darn thing would just fit into the sink…
For the first time in my life, I made round pancake in a form using your grandma’s recipe. Didn’t stick at all and the added thickness was kinda nice. Might have to do with the liberal amounts of egg in it, which is more than most oven pancake recipes I’ve seen (this recipe also doesn’t have any margarine/oil in the batter like most do). That said, I was shocked to my pants to see that the recipe called for water. Never seen that before and just couldn’t force myself to “dilute” it… In retrospect, Sanna suggested that this might have to do with the recipe being originally designed for whole milk/milk directly from cows that is much thicker than the 1.5% fat milk we drink. Also added a twist of cinnamon, I like to do that. Next time, I might add some apple.. Sanna also loves it with bacon and lingonberries (really).
Here’s a pic of today’s non-stick tastilicious pancake a la Måns but sans the water and with cinnamon. Master chef approves, yes no maybe?

And HAVE you ever tried making that pancake with bits of fried bacon in it? And eaten it with crushed lingonberries mixed with sugar? It IS heaven. Really.

On the other hand, it’s the water that makes the whole thing fluffier and even thicker…
